Peach Chia Seed Pudding
Try this healthy alternative to sugary puddings. It tastes like vanilla pudding with a hint of peach.
2 Tablespoons of Chia Seeds
1 peach (home-canned from last fall)
1 Tablespoon of raw honey
1/2 cup of raw milk
1 teaspoon of vanilla extract
makes 1 - 1/2 cup serving
I blended all the ingredients in my Hamilton Beach single serve (it's like a bullet) until creamy. Pour into a serving bowl and chill 20 minutes to allow the seeds to swell and the pudding to thicken. It is so good. Really! you need to try it.
