Kombucha tea a wonderful alternative to soda. I like the sour fizziness. I got to say that the thought of drinking something made from a Kombucha mother or as my friend Tater says, a scoby, kind of creeped me out but once I tried it I was hooked. A Kombucha mother is a gelatinous colony of bacteria and yeast. It ferments the sweet tea and then reproduces itself which allows the brewer to make double the batch the next time around.
