Fried Crappie

There isn't anything better to eat than fresh crappie.  My Dad has been fishing his whole life supplying many families over the years with fish.  He came home with his limit and I decided to film him filleting crappie.  He really makes it look easy but I can testify that it is much harder than it looks. 

 



Mom's recipe is very simple.  Fill a large skillet half way with vegetable oil.  Set the temp on medium high, salt each fillet and then put it into a bag with cornmeal (and just a bit of flour), place fillets one at a time into the hot oil, brown and then put them onto a platter lined with paper towels.  Yum...makes me hungry just thinking about them.
