Rotisserie Chicken and Chicken Broth Recipe


I accidently made up this recipe one day and now it is one I use often.  I bought an electric rotisserie after tasting Mom’s herbed chicken she made last corn season.  It was delicious.  I loved the fact that it wasn’t fried and had more flavor than any baked or roasted chicken I have made.  When my rotisserie arrived from eBay I washed it up and plugged it in.  Yes! It worked. 


My Herb Chicken Recipe


¼ cup of olive oil and 1 teaspoon of the following:
Parsley
Rosemary (fresh from my garden J)
Basil (dried from my garden J)
Thyme
Oregano
Sea Salt
Pepper

Mix and rub into the chicken inside and out.  Place in rotisserie and follow manufacture’s instructions.  Remove chicken and let stand for at least 10 minutes before carving. 


My Herb Chicken Broth Recipe


The rotisserie has a pan that catches all of the drippings.  I fill a large stock pan ¾ with water and place the chicken carcass along with the dripping into the pan.  Simmer 3-4 hours.  Drain the broth into a large metal bowl, clean any meat you want off the bones and place the meat into a container for salad or sandwiches.  After the broth cools, pour it into quart jars.  When the broth is at room temperature you can safely freeze for later, or put them in the fridge and make soup for lunches or suppers. 




*I was thinking how cool it is to get more than one meal off the chicken.  Of course there are only the two of us now but I can feed us 3 times just off the meat (2 suppers with the best meat, and 1 lunch from the meat I pull off the bones) and that “ain’t countin” the broth!
